Thanksgiving In A Blanket

INGREDIENTS
1 tube refrigerated crescent rolls
3/4 c. shredded roasted turkey
3/4 c. prepared stuffing
3/4 c. prepared mashed potatoes
1 c. cranberry sauce
1/4 c. prepared gravy, warmed (for serving)

DIRECTIONS
Preheat oven to 375 degrees F. Line a large baking sheet with parchment paper.
On a lightly floured work surface, roll out Crescent Rolls. Top with mashed potatoes, turkey, stuffing and cranberries. (You’ll want just a small spoonful of each.) Roll up and transfer to prepared baking sheet.
Bake until golden, 12 to 15 minutes. Serve with gravy for dunking.

Home Made Nutter Butters

Nothing beats a Nutter Butter with a glass of milk. Here’s a recipe to make them at home via NoBiggie.net. Just three ingredients for the cookies! Enjoy!

Ingredients
  • FOR THE COOKIES
  • 1 cup sugar
  • 1 cup peanut butter
  • 1 egg
  • FOR THE FILLING
  • ¼ cup butter, room temperature
  • ¼ cup peanut butter, room temperature
  • 1 cup powdered sugar
  • 1-2 tablespoons milk
Instructions
  1. Preheat the oven to 350 degrees.
  2. Stir the cookie ingredients together until smooth. Scoop out 1 inch balls of cookie dough onto a parchment lined baking sheet. Press down with the back of a fork and then press again from the opposite direction, to make the criss-cross pattern on top of each cookie.
  3. To make the cookie dough into the shape of a Nutter Butter cookie, form the cookie dough ball into a log shape.
  4. Roll the cookie dough in sugar (optional).
  5. Press down with the back of a fork and then press again from the opposite direction, to make the criss-cross pattern on top of each cookie. Finish by pinching in both sides of each cookie before baking.
  6. Bake for 12 minutes and then let cool on the tray for 1-2 more minutes.
  7. For the filling: beat the butter and peanut butter in a big bowl with a hand mixer together until smooth.
  8. Slowly add in your powdered sugar and beat until smooth.
  9. Add the milk, one tablespoon at a time until the desired consistency is reached.
  10. Spread a tablespoon of the filling onto the bottom side of one of the cookies and then top with another cookie to create a cookie sandwich…a nutter butter sandwich!

Cilantro Lime Salmon

 

INGREDIENTS

  • 2 tbsp. extra-virgin olive oil
  • 4 6-oz. salmon filets
  • kosher salt
  • Freshly ground black pepper
  • 2 tbsp. butter
  • 2 cloves garlic, minced
  • 1/2 c. low-sodium vegetable broth
  • 1/4 c. lime juice
  • 2 tbsp. honey
  • 1/2 tsp. cumin
  • 1/4 c. chopped fresh cilantro, plus more for garnish
  • 1 1/2 c. cooked white rice, for serving

 

DIRECTIONS

  1. In a large skillet over medium-high heat, heat oil.
  2. Season salmon all over with salt and pepper, then add to the skillet skin-side up.
  3. Cook salmon until deeply golden, about 6 minutes, then flip over and cook 2 minutes more.
  4. Transfer to a plate.
  5. Add butter and garlic.
  6. When the butter has melted and looks foamy, stir in broth, lime juice, honey, and cumin.
  7. Bring mixture to a simmer then stir in cilantro.
  8. Reduce heat to medium and add the salmon back to the skillet.
  9. Simmer until the sauce has reduced and the salmon is cooked through, 3 to 4 minutes more.
  10. Garnish with more cilantro and serve over cooked white rice.

Cheesecake-Stuffed Banana Bread

Ingredients
1/2 c. melted butter, plus more butter for pan
1 c. plus 2 tbsp. all-purpose flour, divided, plus more for pan
1 tsp. baking soda
1/4 tsp. kosher salt
3/4 c. plus 2 tbsp. sugar, divided
1/4 c. buttermilk
1 tsp. pure vanilla extract
2 large eggs plus 1 large egg yolk, divided
3 ripe bananas, mashed
4 oz. cream cheese, softened

Directions
Preheat oven to 350° and butter and flour a 9″-x-5″ loaf pan.
In a large bowl, whisk together 1 cup flour, baking soda, and salt.
In another large bowl, combine 3/4 cup sugar, butter, buttermilk, vanilla, 1 egg and egg yolk and mix until smooth. Pour wet ingredients over dry and stir until combined, then fold in mashed bananas.
Make cream cheese filling: In a small bowl, stir together remaining egg, cream cheese, and remaining 2 tablespoons each flour and sugar.
Transfer half the batter to prepared pan. Dollop cream cheese filling on top and smooth in an even layer with a spatula. Top with remaining batter and bake until deeply golden and a toothpick comes out clean, 1 hour. Let cool at least 10 minutes before serving.
